Perfect for a packed lunch, or serve at any party/get together! These two bite brownies are quick to throw together, with just 10 minutes in the oven (or less if you want them more on the gooey side). Topping with chocolate hazelnut spread, and whatever fruit you have kicking around, makes these little brownies extra cute. I’ve used dark chocolate & dark cocoa powder in this recipe, but feel free to use whatever chocolate you have and regular cocoa powder – I just simply love the taste of dark chocolate. I hope you can make these and share them with someone to brighten their day. It’s so nice to share a treat and see the smile it brings to someone’s face.
If you don’t have a mini cupcake tin, you can easily make these in a 8×8 pan, just increase the baking time by 15 minutes, checking with tester 5 minutes prior. But honestly you can pick a mini cupcake tin up almost anywhere!

Two Bite Brownies
- Prep time: 15 minutes
- Bake time: 10 minutes
- Yields: 2 dozen
Ingredients
- 2 eggs
- 2/3 cup sugar
- 1 teaspoon vanilla
- 1/2 cup butter, melted
- 2/3 cup chocolate, melted
- 1/4 cup cocoa powder
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 cup hazelnut spread
- 1/4 cup chopped fruit (raspberries, kiwi)
Directions
- Preheat oven to 350F, and grease mini cupcake tin.
- Melt butter in microwave and set aside to cool.
- In a medium bowl, whisk together eggs, sugar & vanilla.
- Melt chocolate at 15 second intervals stirring after each.
- Stir in melted butter and chocolate until well combined.
- In a small bowl blend flour, cocoa powder and baking powder.
- Add flour mixture to the medium bowl.
- Stir with rubber spatula until thick batter forms.
- Fill each each cup completely, and pop in the over for 8-10 minutes.
- Once baked, let cool for five minutes, then turn pan upside down and bang on counter. They should all fall out nicely!
- Once cooled completely, spread a small amount of hazelnut spread over each and top with chopped fruit of choice.
- Enjoy!
