This past little while it has been very difficult in our household. Death can be so unexpected, and everybody reacts to it differently. Everyone has their own therapies they practice to get through. I went for a massage, I’ve taken a long soak in the tub, I’ve drank a bottle of wine, and I’ve talked to my friends and family. But, nothing makes myself feel better than being in my element creating something new, and hoping it turns out. Chocolate definitely makes me feel better to. Who else can relate?
Today I had some free time to myself and I wanted to make things feel “normal”. I’ve got a journal with all the ideas I think of and peanut butter brookies is something I’ve been wanting to make for a couple weeks.
Taking my peanut butter cookie recipe and cutting it in half, and topping it with a fudgey brownie batter… the perfect combination! Definitely puts a smile back on my face.
Start by preheating to 350F and greasing an 8×8 pan well.
Make the peanut butter cookie base first.
Combine your butter and brown sugar and mix on medium high speed until light and fluffy.

Add in your peanut butter and mix again.
Add in egg and beat until smooth.

Fold in your dry ingredients; Flour, baking powder and baking soda.

Pour mixture into the 8 x 8 pan, and spread with rubber spatula.

Next, make the brownie batter.
Start by melting your chocolate chips and butter in the microwave at 15 second intervals.

Mix them together, and add in your cocoa powder and mix again. You can do this all by hand.


It should start to look fudgey at this point!
Next, add in the eggs, vanilla and sugar. Mix it well.


Finally, add in the flour. It should be very thick and delicious.


Pour batter over peanut butter base and spread very gently, covering all edges as best as you can.
Toss some white chocolate chips over top and it’s good to pop in the over for about a half hour. Or until a cake tester comes out almost clean, you want a little bit on there for that gooey goodness. If you’re not into that, wait until it comes out clean, but you’re missing out. 😜
Peanut Butter Brookies

- Yields: 16 squares
Ingredients
For the cookie base
- 1/4 cup crunchy peanut butter.
- 1/4 cup butter or margarine.
- 1/2 cup brown sugar.
- 1 egg.
- 1/2 cup flour.
- 1/4 teaspoon baking powder.
- 1/4 teaspoon baking soda.
For the brownie batter
- 1/2 cup melted butter or margarine.
- 1/2 cup chocolate chips, melted.
- 1/2 cup cocoa powder.
- 3 eggs.
- 1 cup sugar.
- 1 teaspoon vanilla.
- 1/2 cup flour.
- 1/2 cup white chocolate chips.
Directions
For the cookie base
- Preheat oven to 350°F, and grease an 8 x 8 pan well.
- In a medium bowl cream together butter and brown sugar until fluffy with an electric mixer.
- Mix in peanut butter.
- Add in egg, and mix until smooth.
- Fold in dry ingredients .
- Spread into bottom of pan gently, and set aside.
For the brownie batter
- Melt butter and chocolate chips in microwave, and combine in a medium bowl.
- Add in Cocoa powder.
- Add sugar eggs and vanilla mixing well with rubber spatula.
- Fold in flour.
- Spread batter on top of peanut butter batter, carefully spreading to the edges.
- top with white chocolate chips.
- Bake for 30 to 35 minutes.
